About the Chef
Corbin Tomaszeski is not only passionate about food, his passion runs deep for his family, his daily ritual to have fun, and his loyalty to his food service team to always coach them to be the best that they can be.
Raised on a farm in rural Edmonton, Alberta, this talented Chef was born to create and to cook. Coming from a very large, Polish Canadian family of six kids, preparing meals was not an option for him and his siblings. He worked along side with wide eyes and eager hands to help his Mother create wonderful meals including heart-warming soups that have since become one of his trademarks.
His ability to exercise discipline with sheer dedication to the dish is a result of years of experience serving under the wing of well respected international chefs. The knowledge gained through these experiences has come together in a manner that allows Corbin to bring his dishes to life. With a hint of French influence, from his frequent trips to France, and his knack for finding the freshest ingredients, Corbin focuses his efforts on creating elegant, yet simple dishes presented with class.

Recipe of the Month
Grilled Lemon Grass Shrimp with Spicy Savoy Slaw
Serves 6
Marinade:
1 Tbsp Honey
2 Tbsp Olive Oil
1 Tsp Sesame Oil
3 Garlic Cloves, crushed and finely chopped
1 Tbsp Ginger Root, finely chopped
Juice from 2 Limes
Zest from 2 Limes
1 Tbsp Coriander, finely chopped
4 Tbsp Rice Wine Vinegar
1 Tbsp Sweet Chili Sauce
3 Tbsp Soy Sauce
24 pieces Black Tiger Shrimp
6 Lemongrass stalks, outer skins removed
Salt and Pepper to taste
Combine all ingredients for the marinade. Toss Shrimp with marinade and skewer 4 pieces of Shrimp per piece of Lemongrass. Grill over med-high heat and baste with marinade. Serve with Spicy Savoy Slaw and serve.
Spicy Savoy Slaw
1 Pound Savoy Cabbage, shredded
1 Carrot, cut julienne
1 Red Pepper, cut julienne
2 pieces Green Onion, sliced thin
Salt and Pepper to taste
1/3 Cup Cider Vinegar
1/8 Cup Sugar
1-2 Tbsp minced Ginger Root
1/2 Tsp Sweet Chili Paste
Combine Cabbage with Carrot, Red Pepper and Green Onion. Season with Salt and Pepper. Combine the Vinegar, Sugar, Ginger and Chilies together and bring to a boil. Remove from heat and cool completely. Once chilled toss Cabbage mixture with dressing and serve.

Q: What is your favourite item on the holts catering menu to make and why?
A: All the mini food items are whimsical and fun! Making them brings me back to my childhood, my mother used to make mini foods for me.
Q: What is the important thing to keep in mind when entertaining with food?
A: The number one rule is to always have enough food! A party should feel welcoming, like going to your grandmother's house. Plan ahead and try and stay as organized as possible. I'm a details kind of guy and I believe that the more detailed you are in your planning, the better off your event will be.
Q: What are some of your favourite drinks or spirits, which can accompany your catering dishes?
A: Sparkling wine is one of those universal drinks that are great to mix cocktails with. The bubbles are fun! Thinking outside of the box when it comes to pairing foods is a great start. For example, making a Caesar with whiskey instead of vodka is a simple change that makes your drink very unique.
